  • 2 organic courgettes, washed and sliced
  • 2 organic yellow pumpkins (or your choice), washed and sliced
  • 1 sweet onion, thinly sliced
  • 1 tablespoon. Crushed garlic
  • Sea salt and pepper to taste
  • Parmesan (optional – skip if dairy-free or autoimmune)
  • 2 tbsp. coconut oil

Instructions

  1. In a large skillet, warm your coconut oil over medium heat.
  2. Add the pumpkin, courgettes, onion and garlic, season with salt and pepper.
  3. Cover and cook, stirring occasionally, for about 8-10 minutes, or until tender, but not mush.
  4. Remove the lid and raise the heat a little to lightly brown the vegetables.
