There are several delicious popular morning tacos filled with Chicharron Prensado Casero in Mexico City, filled with pressed pork chunks. Since this type of “chicharrone” is not easy to find outside of Mexico, this is my shortcut to making it at home. If you know carnitas (fried pork) or have made it yourself, you will love this delicious recipe. You will take carnitas to the next level!
Pork Carnitas In Guajillo Tacos Sauce (Chicharron Prensado Casero)

To make my pressed pork, I cook the pork the same way I make carnitas, but add some pork skins to it. When cooked, I keep the pieces of meat in a vacuum bag, making sure that the meat is as compact as possible. Put it in the refrigerator for a few days and it is ready for cooking. But you don’t have to go through all that process to make these tacos just cut the “Carnitas” in little pieces to cook with the salsa, and you’ll be good.
How to prepare the Chicharron Prensado Casero recipe
GO TO FULL INSTRUCTIONS
- Cut the dried peppers with kitchen scissors and remove the seeds and lines. Place it in a medium-sized bowl and pour three cups of hot water over it. To keep them submerged, place a plate on top. Soak for 30 minutes or until soft. (Please check the ingredients list below)
- Drain the softened pepper, onion, garlic and 1 ½ cup of cold water in a blender. Keep stirring until you get a very smooth sauce.
- Pour the sauce into a large pan with the help of a colander. Turn on the heat over medium heat and cook the sauce for about 5 minutes. Add a teaspoon of Knorr beef or chicken broth.
- Add the chopped carnitas and mix. Cook for about 10-12 minutes, until the meat is very tender and starts chopping when you stick a fork in it. Taste and season with salt and pepper. By this time, the meat will release it’s fat and it will float on the surface. So far, the sauce will also decrease. Lightly chop the meat in the pan with a fork. It serves on warm corn tortillas, good salsa and a few marinated carrots.
How to make meat at home – Carnitas hechas en casa
1 4 – 5 pounds Lean pork fillet, baked, boneless, no excess fat 1 cup green salsa 1 large onion, chopped 4 cloves Garlic, chopped 1 tablespoon Mexican seasoning 2 teaspoons pepper
Place the pork roast in a 9 x 14 pan. Rub the garlic into the roast. Sprinkle with salt and pepper. Cover with green sauce and onion. Cover the pan loosely with aluminum foil. Bake at 300 degrees for four and a half hours or until tender with a fork. Remove the roast from the oven. Cool until comfortable to the touch. Remove from the pan and place on a cutting board. Collect the fat from the juices in the pan. Using two forks, mince the pork. Eliminate the fat from the meat. When all the meat is minced, put it back in the pan and mix the sauces from the pan well with the pork. Return to the oven. Cook uncovered for 30 minutes or until the pork is crispy on the surface. Remove from the oven. Turn on the pork. Return to the oven and cook for another 20 minutes, until the pork is crispy on the surface and there is almost no liquid left in the pan. It serves as suggested above.

One of my favorite Mexican dishes is carnitas tacos. I love the Tacos Tuesdays! Since Cinco de Mayo is coming soon, I need to share my recipe for carnitas with you. I’ve been doing this for years in a slow cooker and have now switched to Instant Pot. Both cooking methods produce amazing carnitas. I’ll also show you two ways to munch on tips to keep them authentic.
Carnitas literally means “small meats,” which is why this Mexican pork is shredded or shredded. It’s Mexican pulled pork. This recipe is enough to give most families at least a few meals a day, saving time and money. You can use it to make tacos, burritos, enchiladas, quesadillas, nachos, bowls of burrito, and more. I made the carnitas tacos, sprinkled them with my Chipotle corn sauce and they were delightful …
On the other half of the carnitas I made the Pork Enchilada with homemade Enchilada sauce… very delicious!

Mexican Pork Carnitas ingrediants:
- Boneless skinless pork shoulder or roast Boston pork
- Mexican beer or beer of your choice (you can also substitute chicken broth)
- lime juice
- Orange juice
- olive oil
- ground garlic
- dried oregano
- cumin powder
- Kosher salt
- freshly ground pepper
- cayenne pepper
How to make authentic pork carnitas?
Preparation of the pork:
First, prepare the dressing for the rub. In a small bowl, combine the oregano, cumin, salt, pepper, and cayenne pepper. Now prepare the pork. Cut it in half to make two equal pieces, leaving the fat behind. Rub both pieces with the spice mixture on all sides.
How to make carnitas in an instant pot:
Add the olive oil to Instant Pot. Select saute and heat the oil for about 2 minutes or until it sizzles with a drop of water, Add the ground garlic to the pot, then the prepared pork. Let it fry for 1 minute more.
Add the beer, Orange juice and lime juice to the pot. Put the lid on the pan and lock it in place. Make sure the float valve is in the sealed position. Select the pressure cooker on the high setting and set the timer to 40 minutes.
When the pork is ready, let it drain naturally. It will take about 15 minutes or more. As always, follow your manufacturer’s guide for natural release.
When the natural release is complete, carefully remove the lid. Transfer the cooked pork to a large bowl or plate. Remove the fat and discard while mincing the meat with 2 forks. Don’t throw the juice into the pot, you will need it. You can pour at least two glasses of juice into a measuring cup or bowl and set them aside.
How to make Mexican pull pork in a slow cooker or pot:
Pour the olive oil into the slow cooker. Add the ground garlic to the bottom and place the prepared pork on top. Pour in the beer, Orange juice, and lime juice.
Put the lid on the pot. Cook on high speed for 4-6 hours or low speed for 6-8 hours. The internal temperature should be at least 165 degrees Fahrenheit.
Transfer the cooked pork to a large bowl or plate. Remove the fat and discard while mincing the meat with 2 forks. Don’t throw the juice into the pot, you will need it. You can pour at least two glasses of juice into a measuring cup or bowl and set them aside.
How to make crunchy carnitas:

How to make crispy baked carnitas:
Set the oven grill on a high level. Line the pan with aluminum foil and spray with non-stick cooking spray. Spread the diced pork on the baking sheet. Sprinkle 1/2 cup of reserved juices. Cook for 3-4 minutes or until crispy. Remove from the oven, mix the meat and drizzle with 1/2 cup more juice. Cook for another 3 – 4 minutes. Remove from the oven, transfer to a serving dish and sprinkle with the reserved sauce. Optional: garnish with fresh cilantro.
How to make crispy meat in a pan:
Add 1 tablespoon of olive oil to a large skillet and heat over medium-high heat until it sizzles. You need to cook the pork in 2 batches so that the pan is not crowded. Place half of the minced pork in the pan and 1/2 cup of juice in the pan. Brown the pork for 1-2 minutes, then stir or flip with tongs and cook for 1-2 minutes or until the edges are crisp. Don’t overcook it. Repeat with the second portion of pork. Transfer to a serving dish and sprinkle with the juices kept aside. Optional: garnish with fresh cilantro.

Carnitas Tacos (Pulled Pork Tacos) are the BEST ever! Mexican slow pork is incredibly tender and aromatic. Add a tablespoon of guacamole to your tortilla (or wrapped lettuce!), Top with a large pile of pulled pork and toss it into the tacos de carnitas!
Tacos Carnitas are made from slow cooked pork that is stuffed. And (not bragging) but I think I have the best carnitas recipe ever. Pulled pork is incredibly tender with magical crunchy pieces full of flavor. It is irresistible.
And because the meat is so tasty, these carnitas tacos need little else to complement a meal. I like them best with guacamole, some ground red onion, and (sometimes) a serving of sour cream. But the options for adding pork tacos are nearly endless. And I have some ideas to share with you.

- They are so easy to do. After removing the pork from the slow cooker, chop it with 2 forks, sprinkle the meat under the grill and then add it to the reduced cooking juices. Now put the pulled pork on top of the tortillas and kick!
- You can celebrate every Taco Tuesday like Cinco de Mayo.

How to make pork tacos
If you can press the power button on the slow cooker, you can make these tacos. Here is your game plan:
- Rub some spices on your pork roast and put it in your crockpot with some Orange juice, lime juice, garlic, and bay leaves. Set the timer for as long as you have. 4 hours high minimum or up to 10 hours low. Now go get some margaritas.
- When you return to the kitchen, remove the pork from the pot and chop it with 2 forks. Now put it under the grill in the oven to keep it nice and crunchy.
- Quickly boil the cooking liquid until it begins to thicken. Now pour it over the crispy carnitas. Go ahead and taste your masterpiece. Just try not to eat the whole batch before making the tacos.
- Now all you have to do is collect your tacos. Place some guacas on a warm tortilla, garnish with carnitas, then sprinkle some red onion on top. And if you’re like me, you’ll also find a place for sour cream.
How To Make Paleo Pulled Pork Tacos + Gluten Free

I have never been impressed with any of the Carnitas recipes that I have tried online or in books …UNTIL NOW! This Carnitas Recipe method by Diana Kennedy, requiring only pork, water, and salt, is the simplest and most delicious carnitas recipe I’ve ever had.
These carnitines arenmade in a slow cooker,which is a good thing.
I love my slow cooker as much as any other person, but many of the carnitas recipes on the internet are slow cookers whose results are far from the really crunchy pieces of tender pork usually found in Mexican restaurants and tacos. .
But this method? It will give you great carnitas at home.
What is Carnitas?
It’s basically crispy, savory chunks of tender pork. Szczególn dobrze nadają się do napełniania taco i burrito.

I’ve only discovered her work recently after coming across this recipe in the Genius Recipes cookbook, and I’m excited to look at some of her own cookbooks because so far I’m pretty enamored with her, hah!
You may have niced that a lot of carnitas recipes call for Orange juice, lime juice, oregano, and so on.
But here we only need pork, salt and water which is tradition.
How to make carnitas:
Start by slicing the pork strips and placing them in a high pan:
Add enough water to cover the pork:
Season the water with plenty of salt:
Cook the pork for about an hour and a half, until the water is finally cooked.

1 The right cut
Carnitas is a simple dish with very few ingredients, which stands or falls on its pork: it simply won’t work with lean meat. Try stocking up on a well-greased spatula at a farm shop or a good butcher, or get advice from William Leigh of Killa Dilla’s Mexican street restaurant and add 500g of pork belly and 500g of guanciale to 1kg of pork shoulder.

Cut the meat into chunks about 5cm all round – you don’t need to get the ruler out, but if you cut them too small, they’ll break down into mush; too large, and they’ll take ages to cook. Leave the skin on: it adds a deliciously gelatinous richness to the final dish, even if you don’t ultimately want to eat it (more fool you).
Put pork cubes (skin left on) in a large, heavy pan in a single layer, then add salt, Orange juice and a bay leaf or two .
3 Put the meat in the pan
Arrange the chunks in a wide, heavy-based pan big enough to hold them in one layer, and preferably a n-too-crowded one. Add enough salt and cold water to cover the meat. You can leave it at that, and many recipes do, but I also favour Orange juice for sweetness, and the savoury flavour of bay.
4 Customize to your liking
Other things cooks add at this point: a cinnamon stick, two or three cloves, a good pinch of cumin, a splash of lager, full-sugar cola, onion wedges, a few smashed garlic cloves, coriander stalks, split jalapeño peppers, a dash of dried oregano – all of which are no doubt delicious, but I don’t think the dish needs them. Trust me: pork is delicious on its own.

Bring the pan to a boil, then turn down the heat and leave it to simmer gently, until the pork is tender but n falling apart, and the water has all but evaporated: turn the chunks occasionally during this time, so they cook evenly. How long it takes depends on your pig, but expect an hour and a half to two and a half hours.
6 Final frying
Increase the heat slightly to encourage any large chunks of fat to render, then, once there’s a generous amount in the pan, turn the heat up to medium-high and fry the meat in its own lard, turning regularly, until golden and crisp in places.
