How to prepare frozen spinach

My farmers market closed months ago and it won’t reopen until the end of April. What’s a vegetable-loving girl to do? There are plenty of fruits and vegetables in the grocery store, but they’re not always at the peak of freshness. At this time of the year I often choose frozen vegetables, which, even if they are sometimes not fresh in summer, have other advantages, such as practicality.

Let’s talk about those vegetables and other goodies that get squirreled away in the freezer. It’s time to pull them out and put them to good use. Let’s start with spinach, shall we?

Frozen spinach is a regular ingredient in my freezer. I like its convenience; it’s pre-chopped and blanched, so it’s ready to throw into all kinds of dishes.

In addition to the usual microwave or pan cooking, here are some favorite ways to make good use of this spinach.

1. Cook in an egg saucepan.

I make an egg casserole for breakfast almost every week and a great addition is frozen, thawed, and dry-squeezed spinach.

2. Combine the soup, stew, chilli and curry.

Almost any soup, chili, stew or curry can benefit from adding a few grams of spinach. You don’t even need to thaw it; just mix the pieces and let them warm up in the soup or stew. This is a great way to pack a large amount of vegetables into your plate, as up to half a pound of spinach will cook quickly.

3. Stuff the pasta or mix it in a saucepan.

Since frozen spinach is already blanched, after thawing and drying it, I find it doesn’t make the casseroles soaked like fresh spinach does, as they release moisture.

Aside from all these specific dishes, however, I believe frozen spinach is a great year round shortcut to any recipe that calls for blanched spinach. I’m thinking of favorites like ohitashi, Japanese spinach blanched with soy sauce or classic southern spinach in cream. You can save time by using well-drained and thawed spinach instead of blanching fresh spinach.

“I always have at least a few packages of frozen spinach and my freezer because they’re convenient and often cheaper than fresh,” says Charlotte Martin, RDN, CPT. “As an added bonus, they last a lot longer than those bags of fresh spinach, which tend to spoil before you have a chance to run out of them,” she says.

Plus, frozen spinach is packed with nutrition, and it may even have more retained than in fresh—so you’re getting the most nutritional bang for your buck. “spinach is loaded with disease-fighting nutrients, like the antioxidant vitamins A and C. It’s also a good source of calcium for vegetarians and vegans,” Martin says. Because of the freezing process, she says it might retain more vitamin C than fresh spinach that’s been sitting on the shelf (and then in your fridge) for several days. However, frozen spinach may seem tougher than other frozen foods. It’s often frozen in large blocks, making it intimidating to handle on a weeknight when you’re just cooking for one. Besides, what are you doing with it anyway? It’s not like you can really make a salad out of it…can you? Read on to learn how to cook frozen spinach.

How to prepare frozen spinach for cooking

First, when shopping for frozen spinach, you have two choices: blocks or bags. (Appetizing, right?)

Each format has its advantages. “I usually buy bags of frozen spinach instead of blocks,” says Martin. “The spinach in the bags is already broken up into chunks, so it’s easier to use for single-serve meals. I can take what I need from the bag, close it and put it back in the freezer for later ”.

Blocks of spinach, on the other hand, are better if you’re making larger quantities of food (meal prep, anyone?). “If you have smaller blocks, try using them in a recipe that can last several days. That way, you can thaw everything at once, which is far less of a hassle than trying to break or cut a frozen block, ”says Kelly Jones, RD.

When dealing with a block of spinach, let it thaw before using, then go to cut it up once it’s no longer frozen solid. “I recommend taking it out of the package and defrosting it for a few hours before using it in a bowl in the refrigerator. Alternatively, you can thaw in the microwave in 30-second increments before you’re able to break it a part,” says Jones. After thawing, Martin adds that excess liquid should be wrung out with absorbent paper, gauze, or a thin, clean cloth. Then, it’s ready to use in practically any dish you choose.

“If I happen to buy a block of spinach, it’s usually to add to a casserole or quiche,” says Martin. She’s partial to her spinach and feta quiche recipe, which uses sweet potatoes instead of wheat flour to make the crust. After thawing and squeezing the liquid from the frozen spinach, combine them with the beaten eggs and cheese, then pour the egg mass into a sweet potato slurry and cook.

I often get emails asking me how to use frozen fruits and vegetables while getting the most nutrients. The truth is that frozen products are often cheaper than fresh ones. It’s also frozen at peak freshness, making it even fresher + more nutrient dense than some of the fresh produce at the grocery store.

My best advice is to buy fresh produce in the right season and then freeze them to preserve almost all of your valuable nutrients. Even if you grow your own leafy greens, you can extend their shelf life by learning to freeze them properly.

  2. Deposit the contents in the ice cube tray and then freeze. Make sure the pan in the freezer is level.
  3. Shop frozen cubes in a freezer container. I use gallon silicone zip pouches so I don’t burn the freezer.
