Strategies to catch crayfish
Crayfish can be caught in freshwater lakes, ponds, rivers, creeks and streams. They are frequently found in habitats with slow-moving water and plenty of rocks and vegetation to provide cover.
They are easiest to find during the summer when water is warmer and most active at night because they are nocturnal. For these reasons, the best time to go crayfishing or set traps is near dusk.
Catching crayfish by hand. The best way to find crayfish is by lifting rocks in shallow areas of a creek or stream. You’ll need to be mindful of the way the water is flowing, lifting rocks into the current so the dust that gets stirred up by lifting the rock is carried out of your field of view. You also want to lift rocks slowly to avoid startling the crayfish underneath. Once you’ve located a crayfish, slowly reach your hand into the water, approaching from its tail. When you’re ready make one fluid motion to grab the crayfish’s body behind its claws to avoid getting pinched. You could also use a net to try scooping crayfish instead or to place it in front of the crayfish and attempt to get it to run in on its own by touching its tail.
Bait crayfishing. Another method you can try is by using a fishing pole and bait fishing with worms, fish parts or even a piece of hotdog or raw meat. Attach the bait to the pole by tying a fishing hook or safety pin on the end of your line and placing the bait on it. Lower the bait into the water and slowly wiggle it until you feel or see a crayfish grab hold. Then slowly pull it towards the shore. If you are close enough to see the crayfish attached to the bait, you can try scooping it up with a net.
Using traps. You can catch crayfish in larger quantities by using traps. Open traps are collapsible nets that are open at one end. Closed traps are a little more intricate with a funnel at one end to prevent crayfish from escaping. Open traps can be placed out for several hours with enough bait. Closed traps can be left overnight. Some traps are baited utilizing a hook that hangs in the center and others use bait boxes or bait jars. Traps should be no larger than three feet in height, width and depth. Cylindrical-, beehive- and cone-shaped traps are preferred to square-shaped traps.
Many states require a fishing license to catch crayfish in public waters. In Ohio, you need a fishing license to catch crayfish in state waters. Additionally, it is unlawful for any person except licensed bait dealers to possess more than 100 crayfish or a combination of crayfish, minnows and other baitfish that exceeds 500. Additionally, a bait dealer’s permit is required of persons buying or selling minnows, crayfish and hellgrammites.

- Separate the tail from the head. Holding the head firmly in one hand and the tail in the other, twist and pull to separate.
- Suck the head. This is an optional — but highly recommended — step. The crawfish head is where all the flavor is, including the bit of yellow sometimes called “crawfish butter” that tastes a little like foie gras.
- Peel the tail. Removing the first couple of tail shell segments will make it easier to get to the meat.
- Pull out the meat. Pinch the tail end with one hand and use your other hand to pull the meat out completely. Clean off the vein down the back if it’s visible and enjoy!
Tips for enjoying crawfish
- Before cooking, rinse your crawfish. Use clean, cool water to get rid of any debris or grit that might remain on the crawfish shell.
- Estimate about three to four pounds of whole crawfish per person. It sounds like a lot, but the actual amount of meat you’ll get isn’t huge. Farmed crawfish raised in ponds are usually smaller, but more available, than their wild-caught counterparts.
- Peeling crawfish for someone else is an act of love. According to Sins, it’s often everyone for themselves when it comes to a crawfish boil. Be prepared to get your hands dirty and have plenty of napkins available to keep the mess at bay.
- You don’thaveto suck the heads. The method of boiling crawfish makes the heads the tastiest part since that’s where all the spices tend to accumulate, but depending on what’s in the boiler, you may find it too spicy or overwhelming if you devour every single head. And it’s ok if you’re simply squeamish — enjoy your crawfish however you like.

Some people call them crawdads, some call them crawfish or crayfish. I grew up in Arkansas and we always referred to them as crawdads, and I will refer to them from now on as such.
I lived with my grandparents most of my life, and they had some property in the country. Most of the property consisted of forest, but there was about an acre towards the front that had a large creek running along the side. The creek ran probably a total of 3-5 miles before it met the Spring River.

Catching Crawdads One by One…
The strategy that I used to catch crawdads wasn’t the strategy you would use to catch a large number of them. If you wanted to catch a lot so that you could cook them, this is NOT the strategy to go by. This one is purely for fun!
As a child, I would walk up and down the creek every day looking for crawdads to catch. They would tend to hide in cool, dark areas such as under rocks or in a small cove. You always have to be very careful when hunting for crawdads because if you moved too quickly you would startle them and they would swim off.
I would always start off by looking under rocks. As I slowly walked up to a rock, I would bend over and carefully pick the rock straight up and out of the water. If I found a crawdad I would place the rock either on the creek side, or back into the water but away from the crawdad.
