This variety actually hails from Hawaii where Japanese immigrants introduced the concept, locals mixed their local pineapple dressing and started using it as a marinade and sauce, Andspecially with chicken and pork.

Making your own Asian sauce from scratch is easy once you understand what ingredients you need. Once you understand this, you can sensibly mix and match what you have on hand!

  • Salty base: soy sauce, tamari or liquid amino acids. Diluted with water to tame the salt.
  • Sweetness: traditionally mirin and sake, but in our recipe we sweeten them with honey and crushed pineapple. Substitute: white sugar, brown sugar or sweet wine.
  • Acidity: Traditionally, sake adds acidity, but in our recipe, rice vinegar and pineapple juice. Substitute: orange juice, red wine vinegar, white wine vinegar or apple vinegar. Even if you are making the base recipe it’s best to add the acidity in if you can in some fashion, it’s really not well balanced without it.
  • Thickener: you can boil it until it thickens or the cornmeal creates a nice glossy glaze. Substitute: flour, potato starch or arrowroot powder.
  • Aromas: ginger and garlic add incredible depth to the recipe. Substitute: finely chopped shallot, finely chopped onion, dried ginger and garlic powder (start with 1/2 tsp and increase to taste)
  • Side: sesame seeds add visual interest and delight with crunchiness. Even a dash of sesame oil is wonderful (watch out, it’s strong!)

This teriyaki sauce is much thicker and more syrupy than traditional teriyaki sauces (think the texture of Panda Express teriyaki sauce). So while it’s not exactly authentic, it does create an absolutely amazing glaze over chicken and other meats and is thick enough to make an excellent dipping sauce.

This recipe calls for eight ingredients: soy sauce, mirin, rice vinegar, powdered and brown sugar, garlic powder, ground ginger, and corn starch.

You probably already have most of these ingredients on hand, but if you don’t really like Japanese cuisine, you may not be familiar with mirin and rice vinegar.

  • Viewfinder: Viewfinder is a slightly sweet Japanese wine that helps give the sauce a spicy umami flavor. It’s readily available online, And(at least here in California) you can find it in the Asian section of your grocery store for less than $3 (it might be labeled Aji-mirin). You can use sherry or marsala instead, or omit them altogether if necessary, but if you have hands, use that. You won’t be sorry.
  • Rice vinegar: Rice vinegar, also known as rice vinegar, gives the sauce a slightly sour bite. You should be able to find it with other vinegars at your local (or online) grocery store, but apple cider vinegar works well as a sauce maker. If you’d like to use white distilled vinegar, which has a harsher taste, cut the amount used in half.

Once you’ve assembled your ingredients, you’ve done the most difficult part of this recipe. When it comes to actually making the sauce, you’re basically just stirring the ingredients together.

  1. First, mix some water and cornstarch.Whipping the cornstarch with the water before adding it to the rest of the ingredients will prevent lumps from forming and the mixture will help thicken the sauce.
  2. Then you will combine the cornstarch mixture and all the other ingredients in a medium saucepan and bring to a boil. Note, watch the sauce carefully as it begins to vaporize. This sauce can boil very quickly once it starts boiling, so be prepared to reduce the heat.
  3. Simmer, stirring occasionally, until the sauce thickens and becomes syrupy.Depending on the size of the pot you are using, this will take 5 to 10 minutes.
  4. Then let it cool down a little(it will thicken further as it cools) and use or refrigerate in an airtight container.

Can I double this recipe?

Homemade Teriyaki sauce is 5 minutes away with a few pantry and fridge staples, Anda quick simmer on the stove. Of course with garlic and ginger, this one sings!

How to make teriyaki sauceIt’s easy. First, gather the ingredients to know you have it all. I usually use fresh ginger, but I have left, so I’ll put some ginger in a pinch.

  1. Tamari sauce.I prefer the low sodium version (there’s still a lot of salt!) And I prefer soy tamari because it doesn’t contain wheat, so gluten-free people are on the safe side.
  2. Brown sugar. You can use either light or dark, it won’t matter. Use what you have. And if you don’t have brown sugar, use granulated.
  3. Fresh ginger. As I said in the photo above, I got out of it so I put 1/2 tsp in it. powdered ginger instead. My motto is “Use what you have”, but if you are fresh, use it. Clean it with your micro-plane.
  4. Fresh garlic. Again, if I went out I would use garlic powder, but fresh is best for that. Clean it with your micro-plane.
  5. Liquid sweetener such as honey, agave, maple syrup or whatever you like. The commercial version of teriyaki uses high fructose corn syrup. We don’t need no stinkin’ HFCS.

You know what teriyaki is supposed to be like, so make it as loose as that, Andnext time don’t simmer that long or on such a high heat. I don’t want to scare you about this step; it’s simple but once I ruined it and thought a higher temperature might be better and made a thick paste out of it. Oops.You don’t have to make the same mistake.

JAR A: Pour it into a clean, squeaky jar with a lid and label it. Two weeks from now, you don’t want to be pulling that jar of brown stuff out of the fridge and asking,“What the heck is this?” Report it now! Or pour it into your existing teriyaki bottle, if you’re lazy like me.

SWEET BOTTLES? In case you don’t have any bottles at home, I have linked a few good-looking bottles at the bottom of this post. They’re available from Amazon. But I’m all in favor of using a clear jar or bottle, so don’t think you have to buy something new to contain your teriyaki sauce.
