Cold-brewed coffee sales at trendy coffeehouses have shot up in the last few years, and they show no signs of cooling off. Yet making cold brew coffee is as basic as its name implies: coffee brewed without heat.

But that cold-brewing factor creates something special and unique: No boiling makes coffee less acidic, mellower, and slightly sweet, which means you’re less likely to spoon in sugar, and people who aren’t a fan of brewed coffee’s astringency find a lot to like in the cold-brew version. That sweetness also makes it ideal for smoothies, milk shakes, cake and muffin batters, and even cocktails.

A little goes a long way, too: Cold-brewing concentrates the flavor, so it’s typically diluted 50/50 with water, milk, ice cubes, or other liquids. And unlike hot-brewed coffee, which tastes drastically different after it cools, cold-brewed’s flavor doesn’t change, which means you can keep a stash in the fridge for up to two weeks. You don’t need any special equipment, either — just ground coffee and cool water.

So why do coffeehouses charge about $4 for a cup of cold-brewed coffee when it has the same ingredients as hot? The same reason theaters charge $8 for a tub of popcorn that costs 90 cents to make — they can. So brewing your own, which costs less than $1 a cup, is like getting a $3-off coupon every day.

Here’s we’ll break down how to brew cold brew coffee so you can DIY this favorite beverage, save money, and always have a refreshing cup of java right at hand.

How to Make Cold Brew Coffee At Home

It’s so easy to make your own cold-brewed coffee. If you make brewed coffee regularly, you have everything you need. Just keep a few glass jars or bottles on hand for storing the cold-brewed coffee, and you can have a cup any time you want.

  1. Put freshly coarse-ground beans into any kind of container (glass is usually best). Use your favorite roast, but make sure it’s ground very coarsely so it won’t cloud the water.
  2. Gently pour in cold, filtered water at a ratio of 4-to-1 (for example, 4 cups water for 1 cup grounds).
  3. Stir gently to make sure all grounds are wet and cover container with plastic wrap.
  4. Let it sit at room temperature for 12 to 24 hours. Taste it occasionally and discard the grounds when the coffee hits your sweet spot.

How to make cold brew coffee in a French press

If using a French press, once your coffee is done, gently press the mesh down on the grounds to filter them out. Pour the coffee into a jar or bottle for holding. French press cold brew makes less mess, so if you plan to brew cold regularly, it’s worth investing in the coffee maker.

With other kinds of containers, put a filter or cheesecloth in a sieve on the mouth of another container. Gradually pour coffee through the filter.

Or, before you brew, use a rubber band to bundle grounds in a coffee filter (you can fit about 1⁄4 cup into a standard filter) or a piece of cheesecloth. Put in the packets and cover the container with plastic wrap. Just pitch the packets when you’re done.

10 Drinks to Make with Cold-Brewed Coffee

1. Mix it with chai tea for a spicy but smooth beverage.

2. Add a shot to hot chocolate, milkshakes, or anything involving chocolate or vanilla. Instant mocha!

3. Blend it into your morning smoothie.

4. Cold-brewed coffee + sparkling water + a few drops of vanilla extract = a great coffee soda. For a mocha soda, stir in a splash of chocolate extract.

5. Make mocktails. Cold-brewed coffee is more flavorful than Kahlúa. Add it to vanilla, chocolate extract, and cream, then shake it with ice cubes to make the ultimate Mudslide.

6. Add boiling water to get a steaming cup that’s less acidic than if you started with heat.

7. Swap in cold-brewed coffee for water or milk when making batters for cakes, muffins, pancakes, or crêpes.

8. Soak ladyfingers in it to make tiramisu. Layer with shaved chocolate, drizzles of maple syrup, and a 50/50 blend of ricotta and mascarpone cheese, then dust with espresso powder.

9. When making custard or ice cream, substitute half the milk with cold-brewed coffee.

10. Use it for poaching, deglazing, or making marinades.

There’s no shortage of ingenuity when it comes to coffee brewing methods, so when I first found out about sous vide cold brew, I thought “oh my, this is brilliant!”

First off, cold brew coffee is just amazing. It’s cool, refreshing, and not at all acidic. It’s got the intensity of coffee but minus the acidity. The only disadvantage is that you have to give it 12 to 24 hours to brew. But who has 24 hours in today’s fast-paced world, right?

We want cold brew!

When do we want it? NOW! So when I found out about sous vide cold brew and that it could be made in a fraction of the time, I was intrigued.

How sous vide works and why sous vide cold brew is so cool

Sous vide is a method of food preparation/preservation that uses vacuum sealing and submerging in a medium-temperature water bath for an extended period of time. There are special immersion sous vide heaters that maintain the temperature of the water bath.

Oh, and you’ll need a LOT of water. A few gallons, at least, depending on the size of the thing you’re trying to cook. Since we’re talking about a 32 ounce or larger mason jar here, you’ll need a pretty big container.

If a food normally takes 1 hour to cook, it will probably take 6-7 hours in sous vide.

However, some brilliant people went ahead and decided to reverse the method! If something takes 12 hours to brew, it should be done in sous vide in just two hours!

Why sous vide cold brew is so cool

Brewing coffee at home is quite easy thanks to the various methods available, but there are only a few temperatures you can reasonably achieve:

  • 40ish degrees F in the fridge
  • 70ish degrees F on the kitchen counter
  • 200 degrees F by letting boiling water sit for some time

As far as most traditional coffee brewing methods go, you’re limited to these temperature ranges. At 40 to 70 degrees F, you’re stuck waiting for hours for your cold brew coffee. At 200 degrees F, you can brew within 4-5 minutes, but the acidity will come through in the final.

Since sous vide lets you control the temperature to many varying degrees in between, it opens up a lot more possibilities for brewing.

The science is not absolutely established, but there is plenty of anecdotal evidence to demonstrate that brewing at 150 degrees F is an ideal temperature for a quick sous vide cold brew coffee.

It seems to be just enough to extract enough flavor quickly, but not too high as to bring out too much acidity and bitterness.

It’s also a neat way to save time! If you feel like having some cold brew coffee and don’t want to wait for hours and hours, a quick 2 hour sous vide will yield you some really nice coffee.

What kind of ratio to use

When it comes to sous vide coffee, one question that you’ll probably have is what ratio of ground coffee to water is the right one to use.

The answer could not be simpler: just use the regular cold brew coffee ratio you’ve always used.

Whether that’s 1:4, 1:8, or anything that tastes good for you, stick with it.

Using sous vide just cuts the brewing time to two hours from twelve hours. The taste is nearly identical to what you would experience from a refrigerated or room temperature brew.

What kind of grounds to use

Again, stick to the same coffee grounds you use for regular cold brew. A coarse grind will help ensure that there is no over-extraction even though the temperature is a little bit higher than normal.

A recipe for sous vide cold brew coffee

What you’ll need:

  • A sous vide set up
  • Mason jars
  • Ground coffee
  • A way to filter the coffee

Here’s what you do:

  1. Measure out coffee beans using your preferred ratio and grind them to the coarsest grind possible.
  2. Fill up your mason jars with coffee and water using the ratio you choose, and screw the lids on. Don’t over-tighten, but the lid should be watertight. For a 1:8 ratio, use 125 grams of coffee for every liter of water.
  3. Fully submerge the mason jars containing your sous vide coffee in a water bath and set the temperature on your sous vide immersion cooker to 150 degrees F.
  4. Let it brew for two hours.
  5. Remove the mason jars from the water bath and filter out the coffee into a jug or container. Use a paper filter to end up with a really clean cup.
  6. Refrigerate until cool, and enjoy by diluting with your preferred amount of water/milk/ice, or drinking straight if using the 1:8 ratio.

Once the temperature soars above 70 degrees, I officially trade in my hot coffee for iced. Iced coffee is a refreshing drink perfect for hot summer days—but if you’re anything like me, you’re not used to making your own iced coffee at home. I’ll admit it: I run on Dunkin’. But uncertain times like these call for new habits, and with plenty of time on my hands, I decided to upgrade my morning coffee routine, cutting out trips to the coffeeshop in favor of home brews.

The process of making iced coffee can be as simple as brewing your normal, piping-hot cup of joe and pouring it over ice—this method, however, may not deliver the best results. Hot coffee tends to melt the ice cubes, leaving you with a watered-down cup of lukewarm coffee. Luckily, there’s another technique that’s known to produce a quality cup. If you’re looking for a real coffeeshop-quality iced beverage, consider a cold brew.

What is Cold Brew Coffee?

You’ve probably seen the term “cold brew” on coffeeshop chalkboards or restaurant menus (and likely assumed that it was a fancy way of saying iced coffee), but the two varieties are actually quite distinct.

Cold brew refers to the technique of grinding and soaking coffee beans in room-temperature water for a longer period of time, typically 10-15 hours. In your standard cup of coffee, the beans only come into contact with the water for around 5 minutes. This means that the flavor of cold-brewed coffee is much more concentrated than that of your average drip. Cold brew coffee may be soaked in room-temperature water, but the final product can be served hot or cold (although it’s most commonly served with milk over ice).

Why has cold brew coffee surged in popularity? “Cold brew coffee doesn’t use hot water, so it doesn’t break down and extract many of the compounds that are responsible for the acidity and bitterness,” writes Javapresse. Cold brew is known for its smooth texture and low acidity—and the fact that it packs a caffeine punch doesn’t hurt, either.

How to Make Cold Brew Coffee

Although cold brew coffee may sound like something you could only get at a fancy coffeeshop, it’s actually quite easy to make at home. All it takes is time, which we have plenty of these days.

The technique of cold brew is fairly similar to the French press: Both draw inspiration from the technique used to make tea, steeping the coffee beans in water to extract their flavors. But there are two notable differences between these methods: A French press uses hot water, while a cold brew uses room-temperature water, and cold-brewed beans soak for an extended period of time, whereas French-pressed coffee is ready in a matter of minutes.

To make cold brew coffee, you’ll want to start with cold brew concentrate. You can buy concentrate pre-made online (like Austin-made Chameleon Cold-Brew) or from your local coffeeshop, or you can make your own. If you choose to go the latter route, here’s how to do it:

  1. Pick your beans. You can use any coffee beans you’d like to make cold brew coffee—it’s entirely dependent on how you like your coffee. Since this method coaxes more flavor out of the beans, you’ll want to use high-quality beans with a dynamic flavor profile. Medium to dark roasts tend to hold up well to cold brew’s soaking technique, resulting in a more flavorful product than light roasts.
  2. Grind your beans. Similar to French press coffee, cold brew coffee calls for a coarse grind. This ensures that the coffee bean particles don’t essentially dissolve into the water, resulting in a gritty texture. You’ll always want to use freshly-ground coffee beans for maximum flavor.
  3. Set up your equipment. That French press that’s been sitting at the back of your cabinet for ages? It’s time to use it. Brewing your cold brew coffee in a French press makes the process easier, as it comes with a built-in plunger to filter the coffee once it’s finished brewing. If you don’t have a French press, use a large cup or mason jar, straining the coffee with a coffee filter or a sieve.
  4. Measure your ratios. Regular drip coffee uses a 1:14 ratio of grounds to water; since cold brew results in a doubly concentrated drink, you’ll want to use a 1:7 ratio. So if you’re using 100 grams of ground coffee beans, you’ll want to add 700 grams of water. (After your beans have steeped, you can add more water to dilute the concentrate and make it more suitable for drinking.)
  5. Pour water over the coffee grounds. Pour the water slowly, ensuring each bean is evenly saturated. Let sit for 5 minutes, then mix.
  6. Let soak for 10-15 hours. You can leave it to brew on your countertop or in the refrigerator.
  7. Strain. Press down on the French press plunger or run your cold brew through a coffee filter or a sieve to separate the grounds from the coffee. Pour your finished cold brew concentrate into a jar or glass and store in the refrigerator for up to 2 weeks.

Since cold brew coffee is stronger than a regular drip coffee (one cup can contain double the caffeine as regular coffee), you don’t need as much of it to achieve the same effect. You’ll want to combine your cold brew concentrate with an equal part of water or milk to dilute it slightly. Pour it over ice and enjoy!

Once you’ve mastered the basic technique, there are plenty of ways to jazz up your cup of cold brew. Use it in a cocktail or a big batch of coffee punch. Try making a flavor-infused simple syrup to bring a bit of sweetness to your coffee. If you want a frappe-style beverage, combine cold brew coffee with milk, ice, and a pinch of sugar in your blender. Or you can take a cue from Italy and pour cold brew concentrate over ice cream to make an affogato.

1. Grind your coffee beans.

When you’re ready to start brewing, the first step is to grind your beans. We’re using Lifeboost’s delicious medium roast coffee. The best cold brew coffee-to-water ratio is 1:5, so if you’re making 20 ounces of cold brew, you’ll need 4 ounces of coffee beans. Using a burr grinder (if possible), grind your beans to a coarse grind size. Your cold brew will be steeping for many hours, so you don’t want a finer grind.

What’s the best cold brew brewing time?

We recommend letting your cold brew steep for 12 to 18 hours. This is a big range, but keep in mind that it’s a slow process, so the flavor won’t be drastically different at either end of the range. The biggest thing to avoid is brewing for longer than 24 hours, after which your cold brew may be undrinkable and very over-extracted. Try brewing for 12 or 14 hours to start and see what you think! Dissolve sugar in coffee.

Pour in a shallow container and freeze for 1 hour. I used 2 – 9”x13” Tupperware containers. This makes the freezing process quicker.

Using a fork, scrape the coffee to break it up. Freeze another 15 minutes and scrape it up again.

Serve in Espresso cups or glasses like in the picture…Enjoy.

One night, we loaded up the boys and drove to Little Italy. We were in our car driving through the traffic. Fans were either in their cars or on foot honking, cheering and waving flags. We were at a red light when this girl came over to the car and handed my youngest son a flag…We opened the sunroof and he began waving and cheering along with everyone else. It was such a blast! Words can’t explain the feeling.
