Plus, cooking takes only four minutes and can be cooked in the microwave instead of the oven. No fancy baking molds or equipment needed as they can literally be cooked in a microwave-safe lunch box.

A more important tip before you start: try using long-established bananas. We are talking about bananas that are lumpy, mushy and even turned black. The older the banana, the sweeter the bread and you won’t have to add extra sugar.

  • 30 g (3 heaping tablespoons) of any sugar
  • 30 g (1 heaping tablespoon) of margarine
  • 30 g (1/3 banana) of overripe banana
  • a pinch of ground cinnamon

    Mash the banana in the cup.

Add the margarine, sugar and cinnamon and spoon until well blended.

  • Then add the flour and mix until smooth and creamy.
  • Microwave the cup for 90 seconds
  • Eat right away.
  • If you are vegan, check your margarine for traces of milk.

  • Use soft margarine as it is much easier to mix.
  • Use a large cup to prevent the mixture from overflowing.
  • If a were gluten-friendly, use gluten-free flour available in most large supermarkets.
  • The recipe above was prepared in a 900 W microwave. If yours is weaker, you can extend the cooking time by 30 seconds.
  • If you can, use an overripe banana as it is naturally sweeter and easier to mash.

  • Any sugar, including powdered, granulated, and coconut sugar works for this recipe.
