It is flavoured with ingredients such as rose syrup, jelly cubes, ice cream and vermicelli with milk.
Besides being a decadent treat to our taste buds, falooda has many health benefits and is a great source of nutrition as well. A glass of chilled falooda drink can cool you down in sweltering summer months and give an instant bout of energy too. There are many versions and combinations of falooda one can find around town such as rabri-falooda and kulfi falooda being two of the most popular ones!
Even though one can find countless places to get delightful falooda, the joy of making it at home is unparalleled. And the best part is you can experiment with different flavours and ingredients at home. Choose to make fresh falooda sev or use store-bought vermicelli, add in rose syrup or khus along with choice of dry fruits, nuts and seeds and top with rabdi if you like!
Here we have a simple falooda recipe that begins with making falooda sev from scratch and goes on to making a yummy, beautiful-looking falooda drink!
In the recipe, cornflour is boiled and made into a cornflour paste that is sieved from a colander to make falooda sev. The sev is then topped over glasses full of milk with rose syrup along with isabgol seeds, which are known to be good for digestion.

Falooda is a traditional Indian dessert in the form of a sweet drink with a taste of rose syrup and other flavors. Although this drink is not very well known in western countries, however falooda has a taste that is easy to match foreign flavors, and has a thickness level almost the same as milkshake or smoothie. Make falooda relatively easy – for some people, the hardest thing is finding a few ingredients to make falooda, although most Indian or South Asian grocery stores do.
- 1 1/2 cups milk
- 2 tbsp sugar
- 2 scoops vanilla ice cream
- 2 tsp basil seeds
- 2 teaspoons rose syrup
- Handful falooda sev
- Peanut chunks pistachios as decoration (optional)
- Rose petals as decoration (optional)
Make it up falooda sev. Follow the directions on the package for best results. If you make falooda sev or your packaging doesn’t provide instructions, follow these steps:
- Boil water in a small saucepan.
- put in falooda sev and cook for about 4-5 minutes.
- Dry it falooda in a colander, soak in cold water to stop the cooking process.
- Use a knife or scissors to cut the noodles into small pieces.
Arrange the ingredients falooda in the glass. Take two tall decorative glasses to serve your drink. Add the ingredients to each glass in the following order (use half of each ingredient per glass):
- Basil seeds
- Falooda sev which has been cooked
- Rose syrup
- Milk ; It doesn’t matter if basil seeds or falooda sev floating upwards at this stage.
Place a spoonful of vanilla ice cream on top of each glass. If you prefer, you can mix ice cream in the drink to dissolve it, but you don’t have to. If you don’t want to mix the ice cream, dip it in the milk at least once to give it a rose flavor.
Alternatively, decorate the drink before serving. Falooda is ready to drink at this stage. If you wish, you can add a handful of peanut chunks pistachios and rose petals on top of the drink for decoration, although it is not necessary.
- Serve falooda immediately. If you are not going to drink it right away, let it sit or save it falooda in the refrigerator. Enjoy!
Method 1 of 1: Optional Serving Instructions
Try adding different flavors of ice cream. With its delicate flavor, vanilla ice cream goes great with rose syrup, but it’s not the only option available. Other ice cream flavors are sweet and soft like strawberry, raspberries, and pistachios can also be an interesting option. Some people even enjoy it with chocolate ice cream flavor.
- Avoid ice cream with a “strong” taste (like citrus), which can overpower the rose taste in the drink.
Try adding a sprinkle of nuts and dried fruit. Nuts pistachios and rose petals aren’t the only materials you can use as decoration. Most dried nuts and berries taste great when sprinkled on top of a drink falooda which is delicious. As an example, golden raisin and almond pieces make a good choice. You can also use craisin and berries dry.
Try using fresh fruit. The fun stuff when making falooda is that you only need a slice or two of your favorite fruit to the drink before adding ice cream to create a new creation. Mangoes, strawberries, and other sweet fruits are the best choices. However, sour fruits like oranges don’t really go well with the delicate flavors that other ingredients have.
Try making falooda with taste smoothie. If you like falooda but don’t have the time to arrange the ingredients, you just have to put all the ingredients inside blender and crushed to produce smoothie. Pour smoothie into the bottle and you’ve had a drink falooda which can be carried around. You can even add ice cubes to the inside blender to produce smoothie which has texture slushie without affecting the taste.
- Smoothie it might separate if you store it in the refrigerator, however smoothie keep it safe to drink.

Falooda Recipe – very delicious and yummy beverage dessert that is flavored with Rose syrup. Key ingredients are sabja seeds(aka basil seeds), vermicelli aka falooda sev, sweetened milk, rose syrup and ice cream.

I am so excited to share falooda recipe with you guys today. This is my most favorite recipe that I make it in summer whenever I crave for some dessert. How can I forget that it is also dear hubby’s favorite dessert? Yes it is heavy and really indulging dessert. But yeah once in a while I do make it.
My next goal is to make falooda sev at home. FYI, falooda sev is made from corn starch or corn flour and water. If you are familiar to falooda then you know what falooda sev is. But for those who does not know, here is the photo of raw falooda sev from store bought packet on left while cooked and drained falooda sev on right. I bought it from Indian grocery store and you can see sev is yellow in color.
Other interesting and key ingredient is falooda seeds aka sabja seeds, basil seeds, tukmaria. You need to soak them for at least 30 minutes. More soaking time does not hurt. Even you can keep refrigerated soaked sabja seeds up to a day. And after 30 minutes it swells up water and creates gel like layer around it. The beautiful pink color of this faluda is comes from rose syrup (another key ingredient). Rose syrup is easily available in Indian and here in USA, you will find in Indian grocery store. Instead of rose syrup, you can use rooh afza as well. It will still taste good.
Last key ingredient is sweetened milk. We are boiling the milk and sugar for some time. So it will thicken slightly and sugar will get melted. After the boiling, this needs to be chilled in the refrigerator.
You need to plan some elements like soaking sabja seeds and boiling-chilling milk ahead of time while making falooda. But all the effort is worth when you enjoy a glass of falooda. And yes making homemade falooda is also economical.
Here I have also added a scoop of vanilla ice cream on top just like we get at falooda stalls. Hence you can call it falooda with ice cream. If you want to make it light then you can skip the addition of ice cream.
Lastly, it is garnished with chopped pistachios and organic chopped rose petals. It is optional though.
Falooda comes in between category of beverage and dessert. But I prefer to call it as a dessert. This is little heavy if you consider it as a beverage. And most important that you have to eat 80% falooda with spoon so I call it a dessert.

Falooda is a popular dessert not only in Mumbai (Bombay) where it is thought to have originated but also in the rest of the country. This chilled drink-dessert is the perfect way to cool off in the summer heat.
- 1/2 cup fine rice vermicelli
- 1/2 cup almonds (blanched and skins removed)
- 1/2 cup pistachios (shelled and skins removed)
- 1 glass chilled milk (preferably tall; same glass used for serving)
- 2 teaspoon sugar (ground to a fine powder)
- 3 tablespoons basil seeds
- 6 tablespoons rose syrup
- 2 scoops ice cream of your choice
Steps to Make It
Gather the ingredients.
Cook the vermicelli as you would pasta–in boiling water until cooked al dente. Strain and set aside to cool. Then chill in the refrigerator till needed.
Cut into thin slivers a few almonds and pistachios–about 6 to 8 each. Keep aside to use as a garnish later.
Put the milk, powdered sugar, remaining pistachios, and almonds in a blender, and blend until smooth. Chill in the refrigerator.
Put the basil seeds in a bowl and pour enough water over them to completely submerge. They will soon start to swell and look transparent with a small dot-like black center. Strain, and keep aside in a small bowl.
To assemble the shahi falooda, frost two tall glasses. In each glass, put half the vermicelli and half the pre-soaked sabza (basil) seeds. Pour half the milk over them.
Put just under half the rose syrup (keep a little for garnishing) in each glass, and mix well. Add a scoop of ice cream to this, and drizzle with some more rose syrup.
Garnish with slivered almonds and pistachios. Add a straw and long-handled spoon and serve!

Falooda is a brightly colored and brightly flavored drink that verges on a dessert, perfect for a warm day. This rose-flavored treat is sure to be a family favorite!
Lots of places with warm weather have a range of delicious treats to help you cool down.
These might be frozen treats like ice cream and popsicles, or cooling drinks like iced tea.
Falooda is one such treat that is somewhere between a drink and dessert, and definitely one to get to know.
What is falooda?
Falooda (or faluda, faloodah) is popular across the Indian subcontinent, but has it’s origins in Persia.
It is believed to have been brought to India and the region by Persian merchants in the Middle Ages, and can be found in one form or another in many parts of South Asia, and beyond.
It is particularly well loved in the Indian subcontinent, which this version is based on.
In Iran you will find faloodeh, but it will look a little different from this. Both use vermicelli noodles and are flavored with rose, but the Persian faloodeh is generally more of a frozen dessert.
The Indian falooda, on the other hand, is somewhere between a milkshake and bubble tea.
Bright, sweet and cooling, it’s a drink you’ll need a spoon to fully enjoy since there are lots of ‘bits’, but it’s worth the effort. It’s so popular, you’ll find it both in restaurants and street food stalls in India and the region.
What are the main ingredients in falooda?
Falooda is made primarily from rose syrup, vermicelli noodles, basil seeds and milk. Some versions are topped with a scoop of ice cream and/or have some jelly in it as well.
You can also find other flavors in India, such as mango, but rose is certainly the most popular and considered the ‘original’.
Ingredients for Falooda: basil seeds, rose syrup, noodles, and milk.
Rose syrup is something you can buy in many Asian grocery stores, but you can also make your own using rosewater, water, sugar and a little red/pink food coloring.
It’s essentially a simple syrup, which you can also use for cocktails.
For the noodles, you can buy falooda sev, vermicelli noodles made from cornstarch or arrowroot starch that are specifically made for falooda. However, any thin, wheat or rice noodles will work fine.
And, while it might not be the most traditional, when making this recipe again, I think I will cut the noodles into short lengths because personally I think it would make them easier to scoop up and eat.

What are edible basil seeds?
The basil seeds used in falooda, also called tukmaria or subza, are similar to chia seeds but they are nutritionally slightly different.
They come from the sweet basil or Thai basil plant, not to be confused with the basil you may be more familiar with that is common in Italian cooking.
Basil seeds react in a similar way to chia seeds when soaked, they become gelatinous.
In falooda, they give a texture a little like bubble tea, but much smaller and lighter. They are often said to have a cooling effect, and the whole drink is certainly great for a warm day.
If you can’t find basil seeds, chia seeds are a good substitute here.
How to make falooda (and how kids can help)
Falooda has a few steps since there are a few components to put together, but they are all easy to do, and so they are also great to have kids help with.
- Even young kids can pour water over the basil seeds (and be amazed as they expand).
- Older kids can add the noodles to boiling water and drain them once done.
- Most kids can help layer the components in the serving glasses.
With an unusual, but fun, mix of textures and a gently sweet, rose-scented flavor, falooda is a great dessert-like drink that’s perfect on a warm day.
Whether you keep it simple or add in the jello and/or ice cream, it’s no surprise it’s popular in a hot climate. And it’s one to add to your family’s summer to-try list.
How To Make Falooda
Switch up your usual summer treat with a creamy cup of this Persian falooda, made with rose-flavored milk, tapioca pearls, and strawberry gelatin.
Serves: 1 Person
- ½ strawberry gelatin, prepared according to package directions, or ready-made
- 1 tbsp basil seeds
- 1 cup water, divided
- 1 tbsp tapioca pearls
- 1 cup milk, cold
- 3 tbsp rose syrup
- 1 tsp rose water, Nielsen-Massey
- 1 tsp pure almond extract, Nielsen-Massey
- 2 scoops vanilla ice cream, or strawberry ice cream
- 2 tsp pistachios, crushed
Prepare strawberry gelatin according to package directions if not using ready-made. When this is set and able to be cut, start making the falooda.
Soak basil seeds in ½ cup water for 30 minutes.
Add tapioca pearls to ½ cup water and place in the microwave for 25 seconds.
Pour milk, rose syrup, Nielsen-Massey Rose Water, and Nielsen-Massey Pure Almond Extract into a large glass and stir to combine.
Then, take 2 tablespoons of soaked basil seeds and add them to milk mixture.
Take 2 tablespoons of the tapioca pearls and add them too to the milk mixture and stir gently.
Cut up the strawberry gelatin or scoop it out and add 5 tablespoons of it to the milk mixture.
Top with ice cream and pistachios and enjoy!
Hello, and welcome to Anupma’s kitchen. Here we learn how to make falooda with best three methods.
- 2 tbsp – Basil/Sabja Seeds
- Two tbsp – Vermicelli/Falooda Sev
- 2 tbsp – Mango puree
- 1/4 Cup Cold Milk
- Scoops of Mango Ice cream
- Mango Cubes
So let’s start, how to prepare Mango falooda. At first, we’ll soak the basil seeds in water for 15-20 minutes. Along side, we’ll boil the falooda noodles.
After boiling the falooda noodles for 2 to 3 minutes, we’ll assemble the dessert. When the falooda noodles have boiled, place them in cold water, so they don’t get melt completely.
First, we’ll put one tbsp rose syrup, add 2 tbsp of basil seeds, 2 tbsp falooda noodles, 2 tbsp of mango puree, and 1/4th cup cold milk.
You might think that the glass is half-filled but don’t worry; we’ll be adding another layer. Now we’ll add mango ice cream.
Add some mango cubes and garnish it with some chopped cashews and raisins. So the delicious mango falooda is ready.
Strawberry Falooda recipe
- 1 cup – Chilled milk
- 1/4 th cup – Strawberry syrup
- One small size – Chopped apple
- One small size – Chopped banana
- 1 tbsp – Chia/sabza/sweet basil seeds soaked in water overnight
- 2 tbsp – Blanched vermicelli ( Falooda sevaiya)
- 1/2 cup – raspberry jelly
- Tutti Frutti
- 3 – tbsp condensed milk
- Vanilla ice cream or you may take any other of your choice)
- Chopped dry fruits ( almonds, cashew nuts, pistachio)
This cooling ingredient is prepared in summer because the ingredients used to prepare it help cool the body. But it can be enjoyed throughout the year as the flavors are very aromatic, sweet & soothing.
Let’s check out the ingredients. So, moving on to the kitchen first, we will add strawberry syrup to the chilled milk. Please give it a mix. Then add chopped apples & banana to the condensed milk and mix it well.
Now the assembling part. First, we will put the soaked chia seeds into the serving glass. We have soaked it overnight. Now goes in some blanched vermicelli on top of that goes our homemade Jelly.
Throw in some tutti fruiti, add some fruit mixture, and add a layer of Jelly. Now add chilled strawberry milk and my favorite vanilla ice cream.
Drizzle some strawberry syrup and sprinkle some chopped dry fruits. So how about relaxing & treating yourself to this gorgeous falooda ice cream in the comfort of your home & feel special.

Thalassery Falooda recipe
For Jelly, we need:
- Jelly Mix – 90 gm
- Water – 500 ml
For Falooda, we need:
- Falooda Mix – 50 gm
- Milk – 250 ml
- Water – 50 ml
For the topping, we need:
- Oil – 1/2 Cup
- Cashew (broken) – 2 tbsp
- Raisins – 2 tbsp
- Dried Cranberries – 2 tbsp
- Dried Blueberries – 2 tbsp
- Banana – 2
- Apple – 1
- Mango – 2
- Chikoo – 4
- Grapes – 1 Cup
- Ice Cream – 500ml
This falooda seems to be available only in Thalassery, Kerala atleast, I’ve never eaten anywhere else, and it’s great for summers. So here, we will learn how to make my version of Thalassery Falooda.
We are going to start with the Jelly because it takes time to set. We will use a 90-gram box of strawberry flavored jelly crystals, which comes with 80 grams of the jelly mix, and 10 grams of jelly premix.
To make the Jelly, we will first boil 250ml of water, add both the jelly mix and the jelly premix into it, let it dissolve, and switch off the heat.
Now we are going to add another 250 ml of normal temperature water to this. Transfer it into a bowl and keep it outside for about 1/2 an hour to cool. Later refrigerate it for another 1/2 an hour to set the Jelly.
To make the falooda, we will take 50 grams of falooda mix. It is usually available in any general store in India.
We will heat 250 ml of milk and 50ml of water for a few minutes, add the falooda mix, and boil till it becomes thick and creamy.
So once it reaches this thickness, you can switch off the heat. Let this cool to room temperature, transfer it into a bowl, and refrigerate it for a minimum of 1 hour.
Now we will fry a few dry fruits and nuts, for topping, in about 1/2 a cup of oil. We will first fry 2 tablespoons of broken cashews until they are light golden brown and two tablespoons of raisins until they bloat.
Similarly, we will fry some cranberries and blueberries. Let’s chop a few fruits now. We will peel and dice all the fruits except for the grapes.
Now we will assemble it in a long glass. We will take 650ml glass. First, pour three tablespoons of falooda mix into the glass.
Then add two tablespoons of Jelly, top this off with one scoop of ice cream, two tablespoons of each fruit. We will repeat another layer of Jelly, another three scoops of vanilla ice cream, and top this with the fried nuts.
Any other size glass can be used, but it cannot be smaller than 300ml. This dish is enjoyed best if you gently mix all the layers. It may be a little difficult but really rewarding. So please leave a comment on how you liked it.
