How to make eggnog truffles

Eggnog truffles make a great holiday gift or hostess gift. Wrap the truffles in a Christmas mold in the greaseproof paper.

Melt 8 ounces of chocolate as recommended on the package. Whip the cream cheese, sugar, nutmeg and blend in a large bowl with an electric mixer on a blender at medium speed until the mixture is well blended and smooth. Add the melted chocolate; beat until well blended. Lid. Store in the refrigerator for at least 4 hours or until it hardens.

Roll into 24 balls (about 3/4 inch). Place them on a baking sheet lined with greaseproof paper. Refrigerate until ready to soak.

Only cover 12 truffles at a time. Melt 4 ounces of the remaining chocolate in a small microwave-safe bowl on MEDIUM (strength 50) 1 1/2 minutes, stirring after 1 minute. Using a fork, dip 1 truffle at a time into the melted chocolate. Tap the back of the fork 2 or 3 times on the edge of the pan to drain the excess chocolate. Arrange the truffles on a baking sheet lined with baking paper. (If the truffles are peeled, cover them with the melted chocolate left on the fork.) Sprinkle the truffles with nutmeg. Eggnog truffles are the perfect Christmas candies. They combine the rich taste of eggnog with the addition of nutmeg and sweet white chocolate. These festive truffles will be welcome at any Christmas party or as part of a festive dish; they are also perfect fillers for garters or hostess gifts during the holiday season.

For this recipe, be sure to use plain eggnog (sometimes labeled “traditional” or “premium”) over “light” varieties. Light or low calorie eggnog does not have enough fat to produce a rich and luxurious truffle.

With each bite they are like a large and tasty glass of eggnog. I was begging her for the recipe and she finally got it to me – and she said I could share it with you.

Trust me when I say I can’t make homemade candy for my life because I really can’t.

However, thanks to this recipe, I feel that I could make a living, because they always turn out perfect.

The trick of dipping chocolates and truffles

Dipping chocolates has always been a challenge for me. I feel like I always mess them up, or can’t get the chocolate to look right.

However, we have found the best way to dip chocolate, or in this case, egg truffles.

All you need is a plastic fork with four teeth.

Simply break the two central teeth to keep only the outer teeth intact. Then put the egg truffle in the white chocolate (I only use my hands), cover it and make sure it is completely covered.

Then, using a two-pronged fork, remove the truffled egg from the chocolate and place it on the tinfoil or on the prepared pan or pan.

That’s all.

If it contains truffles, gently smooth the chocolate over it by sliding the sides of the fork along it.

Bam. Perfect truffles every time.

How to store these truffles?

If you prepare them in advance, we advise you to put them in an airtight container and let them cool until ready to serve.

I prefer them cold, but they are also delicious at room temperature.

They also freeze very well.

Depending on how early you prepare them, remove them from the freezer 24 hours in advance and put them in the refrigerator to thaw.

If you take them out of the freezer and then put them on the counter, they will get wet and lose their crunchy chocolate texture.

Eggnog, a classic creamy cocktail, is an essential part of the winter break. The recipe can vary depending on who’s making it, but the basic formula consists of eggs, sugar, milk and cream, plus a spirit. In the case of the latter, most people choose bourbon, rum or brandy and some even choose to combine different spirits for oomph. Whichever route you choose, the strength of this drink will add a little more fun to your vacation.

Eggnog has a rich history with many conflicting claims about the drink’s origin, many of which get lost in the etymological debate. It’s possible the word derives from an Old English term for strong beer. Or perhaps it comes from noggin, an obsolete word used to describe a cup. Or perhaps the name is associated with grog, a term given to various alcoholic beverages.

That said, it’s believed that the first known use of the word “Eggnog” dates to around 1775, but it’s likely that the drink itself—or a version of it—preceded the term by a couple hundred years. And there seems to be a consensus that Zabaglione as we know it today is the culinary descendant of Posset, a hot but egg-filled punch that was eaten by European monks as early as the 13th century.

In Europe, beer was eventually replaced by sherry. Before the drink reached American shores, settlers replaced sherry with everything they had on hand: rum, rye whiskey, and brandy. Those early iterations of the cocktail had staying power, and today, Eggnog is still widely consumed throughout the U. S. and even into Canada. It’s especially popular during the holiday season and can be consumed hot or cold, per the drinker’s preference—and perhaps depending on how brisk the weather outside is.

This recipe for Zabaione truffles was one of the first recipes I shared back in winds11. I’ve only made them a few times since, but if you love the flavor of eggnog and nutmeg these are for you!

What is a truffle?

Don’t confuse these truffles with mushrooms that grow underground, because they are NOT the same.

When it comes to desserts, truffles are a kind of chocolate cream. It’s generally coated in either cocoa powder, coconut, chocolate or chopped nuts. It’s also usually round in shape.

How do you make Zabaione truffles?

Start by adding the chocolate, eggnog, cream, and nutmeg to a medium saucepan. Stir over low heat until all the chocolate is melted.

Remove from the heat and mix with the yolk. Then beat the butter until it melts. Pour the mixture into a bowl, cover with aluminum foil and refrigerate for a minimum of 8 hours or overnight.

Using a spoon, form the mixture into 1/2 inch balls. If it starts to soften, put the mixture in the freezer for a few minutes so that it thickens as you work. Mix the icing sugar and the remaining nutmeg and roll the balls. Store in the refrigerator for up to 1 week.

I’ve made several types of truffles including Bailey’s Irish Cream Truffles, Dark Chocolate Coconut Truffles, and my favorite Hazelnut Truffles. But these Zabaione truffles remind me of Christmas so I generally only make them during the holidays; while I do the rest all year round.
