I try to keep most of my recipes as simple as possible – the fewer ingredients and preparation, the better. This celery soup is one of those recipes – a little bit of chopping, throw it all in the soup maker and 21 minutes later you’ve got a delicious and nutritious soup!

I’ll be honest with you, I’m really not a fan of celery (sorry celery). I really want to like it but it’s one of those foods that just doesn’t get on with my taste buds. Although I do include it in some soups, it’s not usually the main ingredient.

So I was ready with my chili flakes on hand to sprinkle the soup to mask the celery flavor – but here I am, already on the second bowl, no chili flakes! Oh, soup, you have magical powers 😉

I wanted a simple but thick / creamy texture with this celery soup. When I want to thicken the soup, I usually add chopped potatoes, but you can also use cream (just add it at the end).

The only ingredients in this celery soup are;

  • 400 g of chopped celery
  • 200 g of chopped potatoes
  • 3 cloves of garlic, crushed
  • 800 ml of chicken broth (you can also use vegetable broth).

I didn’t bother with any sautéeing, it just all went in the soup maker. I mixed it quickly and then dried it smoothly.

I’ve now checked my numbers two and three times and I think I’m right – this celery soup contains 209 calories – which works well foronly 52 calories per serving! – a perfect excuse for a double serving 🙂 Probably the most caloric soup I’ve ever made. No wonder so many people use it as a weight loss food.

Most of us appreciate and appreciate the luxury of convenience from time to time, but we all know that there is NO comparison between store-bought “cream” soups and homemade soups. No comparison in taste. There is no comparison in the purity and health of the ingredients. And I would never even consider eating canned food like real soup. Mixing it with a few other ingredients as part of a recipe is one thing (and it’s just something I’ve done on very rare occasions, turning a blind eye to the ingredient list), but is mixing it with milk, heating it up and eating it the same? *gag* I still can’t fathom how my husband thinks that canned cream of chicken soup tastes good. Again, a very rare indulgence, but nonetheless. Uh! I asked Todd if it’s okay if I reveal this fact about him to the world. His response, [laughing] “Sure, go right ahead, I’m not ashamed of that!” *sigh*

This celery cream soup is sublime. I whipped it up to use as the base for a Creamy Cabbage & Kielbasa Soup I was developing for dinner that evening (oh so good and recipe to come!) but it was so good that I was really tempted to eat it plain and just make something else for dinner.

For best results, be sure to use good quality celery that’s very fresh and full of flavor. When it comes to celery, organic really is the best. Do not-organic commercial celery usually tastes like a crunchy stalk of water with “a little” celery. So get the good stuff from your local farmer’s market. And there have been many times when I’ve been surprised to find the organic celery selling for the same price as, or not much more than, non-organic.

This recipe is also a great base for many other “creamy” vegetable soups. Replace celery with mushrooms, asparagus, broccoli, etc.

So, without further ado, let’s get started!

Cut the onion and celery into small cubes and chop the garlic.

Melt the butter in a Dutch oven and saute the onion, celery and garlic over medium heat until soft and transparent, 5-7 minutes.

I love using cream soups but I don’t always have it in the pantry. It all started when I needed a broth cream for the recipe and whipped up this homemade chicken soup cream. It was so successful that I started doing different things.

  • Butter
  • All-purpose flour
  • chicken decoction
  • milk or half and half
  • salt and pepper
  • garlic powder
  • onion powder
  • Celery

First, melt Butter in a medium saucepan.

Then add the flour and mix everything until all the lumps are gone. You want everything to be well connected.

Next, pour the chicken decoction and milk into the flour mixture. Beat until smooth.

You can use a hand blender if you have one, but it’s really up to you. For me the whip works well.
