- 1 avocado
- 60 g of self-raising flour
- 175 g of milk
- 1 egg
- Pinch of salt
- Lime juice
- Oil / butter
To make the pancakes, extract the avocado and mash it with a little salt and lime juice.
Weigh the flour and add a pinch of salt. Whisk the egg and milk together, then pour into the flour mixture. Whisk together until everything comes together.
Heat some oil / butter in a pan. Pour a ladle of dough and cook on one side. Gently flip the pancake – it will be very soft – and cook on the other side. Serve hot.

For 6 pancakes
1 ½ cup all-purpose flour
3 tablespoons of powdered sugar
1 tablespoon of baking powder
1 teaspoon of kosher salt
Freshly ground black pepper
1 Californian avocado, puree, plus one to serve
zest of 1 lemon plus 1 teaspoon of lemon juice
1 ¼ cup of buttermilk
4 ounces of smoked salmon
White yogurt, sour cream or creme fraiche
- In a large bowl, combine the flour, sugar, baking powder, salt and a pinch of black pepper.
- In a medium bowl, combine the California avocado puree, lemon zest and juice, buttermilk, and eggs. Mix until smooth and well blended.

Heat 1 tablespoon of olive oil in a small non-stick heat-resistant pan over medium heat; add the bread and crack 1 egg into the hole. - Then add kala namak, black pepper, cayenne pepper, guacamole, almond milk, lime juice, coriander & grated courgette. Ensure that you’ve squeezed out all excess water out of the courgette. Mix well until combined.
- Finally, brush the non-stick pan with a little olive oil and fry the pancakes for a few minutes on each side until cooked.

After that, once they’re frozen, I transfer them in a zip lock bag for easier storing. They can be stored in the freezer for up to 3 months. You can use a microwave, an oven for heating, and I’ve even used a toaster with success in the past.
