You know it’s autumn when pumpkin pie is what’s for dessert.

It is one of the iconic flavors of the fall season, and its popularity peaked around Thanksgiving. There are a lot of expectations for such a simple cake. Read on to learn how to make pumpkin pie from scratch and get the best recipes for you to try, including canned or fresh pumpkin pie fillings, skinless pumpkin pie, and no-bake pumpkin pie.

How to make pumpkin pie

Pumpkin Pie is a cream pie with a sweet filling made from pumpkin puree mixed with eggs, milk and hot spices like cinnamon, ginger and nutmeg. Pumpkin pie is typically an open-faced single skin pie baked in Graham cracker or Graham Pie, or you can make a skinless pumpkin pie if you prefer.

Stuffed with pumpkin pie

The ingredients for the pumpkin pie filling can be easily mixed with a simple wire whisk, planetary mixer, hand mixer, electric mixer or food processor.

  • Canned pumpkin puree is a quick and easy way to make a pumpkin filling. Before buying, check the label to make sure what’s in the can; if it is labeled “pumpkin pie filling” it is already seasoned. Many cooks prefer to use plain unflavored canned pumpkin so that they can add their own spices and sweeteners to taste.
  • If you have time, you can make your own pumpkin puree from scratch. For the best flavor, choose small, sweet pumpkins or another winter squash over large lantern pumpkins – they’re too fibrous and tasteless for a decent pie.
  • If your recipe calls for pumpkin pie spice, you can make your own by mixing ground cinnamon, ginger, and nutmeg (and sometimes allspice and / or cloves), rather than buying a blend that you can only use once a year.
  • Some cooks like to make the filling for the cake and refrigerate it overnight to let the spice flavors blossom.
  • If your pumpkin filling is cold, leave it at room temperature for about 30 minutes before adding it to the dough. This helps cook the filling evenly.

Pumpkin Cake

  • Pumpkin pies typically have a bottom made of dough or fine dough like crushed graham crackers.
  • To keep the bottom crust from getting soggy, it’s a good idea to pre-bake (blind cook) for a few minutes before adding the liquid filling to the dough.
  • Some cooks like to protect the edges of the crust with aluminum foil to prevent the pre-cooked crust from turning too brown when it comes back into the oven with the pie filling.

Cook the pumpkin pie

  • Moving a cake filled with liquid filling from the countertop to the oven rack can be difficult. Try this instead: Fill the prepared crust only halfway, place it on the oven rack (with the optional pan underneath), and add the rest of the filling. No losses!
  • Cook the pumpkin pie sulla griglia inferiore anziché su quella centrale. Thanks to this, the bottom of the peel is completely cooked.
  • Follow the directions on the pumpkin pie recipe for temperatures and cooking times. For best results, use an oven thermometer instead of one built into the oven.
  • To prevent the pumpkin pie from cracking too often, cook it until the filling is firm but still a little wobbly inside. Cracks are caused by the overcooked filling, which will continue to boil and thicken even after being taken out of the oven to cool. But if it breaks, it’s easy to disguise yourself with a few pieces of pasta cut from the cooked leaves or a luxurious whipped cream.

How do you know when the pumpkin pie is ready?

Pumpkin pie can be a little tricky because you want the cream filling to be cooked but you don’t want it overcooked – this causes the pumpkin filling to separate or “crack”. And while it’s not the end of the world, it’s not pretty. So how do you know when the pumpkin pie is ready? Here are some ways to make a statement:

  • The filling temperature for the dough is about 170 degrees F (77 degrees C), measured near the center of the dough.
  • A table knife inserted near the center of the cake comes out clean, without the liquid dough sticking to it.
  • The filling of the dough swings slightly towards the center of the dough when you shake it. Due to the heat, the leftover dough will continue to bake and build up even when it is removed from the oven.

How to store pumpkin pie

The pumpkin pie needs to cool to room temperature so that the cooked filling can still take shape. Since it is made from perishable ingredients such as eggs and milk, for food safety reasons, do not leave it on for more than two hours. Pumpkin pie should be lightly covered with foil and refrigerated for up to 4 days, even if it lasts that long. #oven

This pie was developed with this Pecan Ginger biscuit. It’s the perfect complement to this no-bake pumpkin pie. You don’t even need to cook the shortcrust pastry (although I recommend it if it can be pre-cooked it is preferable).

How to Make Without cooking the pumpkin pie

Start by preparing the crumb. This post contains a lot more information on how to create easily. You can choose whether to pre-bake the dough for 8 minutes in the oven or freeze it to firm it. I always prefer to steam the crust as it makes the crust harder and gives it a nice toasted flavor. However, if your oven space is limited, go ahead and freeze the crust for 30 minutes before stuffing.

Then start with the filling. This no-bake batter uses cream that has been whipped until stiff to act as a stabilizer, as opposed to gelatin or egg whites. This is my favorite method of making this type of cake without baking as it has the right texture and flavor. First, beat the cream until you get a stiff foam. Stiff spikes are when you take the whisk and the whipped cream holds the tops stiff without moving at all. After whipping the cream, remove it from the bowl and set it aside. In an empty bowl, whisk the other half of the filling together. Per prima cosa, sbattere la crema di formaggio e lo Brown sugar fino a ottenere un composto completamente liscio. Then add the pumpkin and spices and blend until completely blended.

Then they will combine the whipped cream and the pumpkin filling. Start by adding the whipped cream and whip it by hand with a rubber spatula until it is completely blended. Then add the rest of the whipped cream to the bowl and add it gently, being careful not to let it come out. Take it slow and easy.

Finally, lay the pumpkin filling into the prepared batter and level it on top. Everything must be chilled, in the refrigerator or freezer to solidify. It needs at least 4 hours of cooling, but the overnight method is best.

Just before serving, prepare the Tangy Cinnamon whipped cream and sprinkle it to taste.

This Without cooking the pumpkin pie tastes delicious topped with a tangy cinnamon whipped cream. While it’s optional, it really adds a nice touch to the end result. Sour cream has been added to the whipped cream, which gives it spiciness but also makes the cream more stable. It’s great for finishing the cake for a really classy look.

Or you can put the whipped cream directly on top of the cake and turn it well. Sprinkle some cinnamon on top for color contrast.

How to make pumpkin pie without cookingHOW TO SERVE WITHOUT BURNING PUMPKIN?

This cake should be served very cold. It can be prepared up to 2 days in advance if refrigerated, or up to 1 month if stored frozen. Don’t pour whipped cream over it until it’s ready to serve.

In the case of serving as a refrigerator, I recommend placing the dough in the freezer 30-60 minutes before serving, even if it is not necessary.

To serve out of the freezer, leave the dough at room temperature until easy to slice, about 15-30 minutes, depending on how hot your kitchen is.
