  1. Preheat the oven to 350F

Steps to do it

Prepare the chicken breasts

Preheat the oven to 350 F.

Hammer the chicken breast halves between two sheets of cling film about 1/2 inch thick.

In a shallow skillet, heat the olive oil over medium heat.

In a bowl combine the breadcrumbs, oregano and garlic powder. Season the mixture with salt and freshly ground pepper.

Brush the chicken breasts with the breadcrumbs.

Fry the chicken breasts in olive oil until golden brown, about 4 minutes per side.

Place the chicken in a baking dish and set aside.

Make a sauce

In a saucepan, combine the tomatoes, sugar, oregano, basil and garlic powder.

Cook over medium heat for 10 minutes.

Season with salt and freshly ground pepper.

Fold and cook the saucepan

Pour the sauce over the browned chicken on a baking sheet.

Place the pepper slices on each chicken breast and sprinkle the surface with mozzarella.

Bake for 20-30 minutes or until the cheese is melted and golden.

Service suggestions
Since it’s kind of like eating skinless chicken and pepperoni pizza, you need starch to round it all off. A good solution is butter-soaked pasta with fried onions and mushrooms, garnished with parsley. Or a simple side dish of spaghetti dipped in olive oil and garlic is a tasty complement. Add the garlic bread (more carbs, but it’s an Italian night) and Italian green lettuce with lettuce, artichoke hearts, red onion, and parmesan with vinaigrette sauce.
